A bowl literally filled with goodness!
Ingredients
1/2 cup brown or basmati rice
300-400g chicken breast fillet
1/4 red cabbage, finely sliced
1 bunch english spinach or kale, roughly chopped
1 beetroot bulb, grated
Fresh coriander, roughly chopped
1cm fresh ginger, finely sliced
1 garlic clove, finely sliced
1/2 red chilli or chilli flakes (optional)
Coconut Oil
Handful of pepita and sunflower seeds
Dressing
2 tbs unhulled tahini
1 tsp apple cider vinegar
1 tbs olive oil
1/2 lemon, squeezed
Salt + Pepper to taste
Tamari (optional)
Method
Place your rice in a saucepan, cover with water and cook on a moderate-high stove. Bring water to the boil, then reduce and simmer until cooked.
Meanwhile, you can either poach or steam your chicken breast. If you are steaming, chop the breast into cubes, place in your steamer and cook until cooked through. Or to poach, add the chicken breast, roughly chopped to a pot and cover with water. Bring the water to the boil, then reduce and simmer, until chicken is cooked through, it should not take long.
Set the chicken aside to cool.
Add a tablespoon of coconut oil to a wok or pan and heat up on high. Then add the garlic, ginger and optional chilli. Cook through for 2 minutes. Add the cabbage and green spinach and sauté until tender. Remove from the pan. And then quickly throw in your seeds to pan roast them quickly until brown.
Add the chicken to a food processor and pulse quickly to shred. Or you can do it by hand using a fork.
In a small bowl, add the dressing ingredients and stir with a fork. You can add a small amount of water to thin it out.
Grab a large deep bowl. Place 1/2 cup cooked rice in each bowl on the bottom. Then if you want the classic ‘Nourishing Bowl’ presentation, grab each different ingredient separately and place on top of the bowl in its own section. Place a handful of coriander leaves in the centre of each one, sprinkled with the seeds. And drizzle your tahini dressing on top.
To enjoy your bowl, ruin the presentation and mix all of the ingredients and dressing in together. I also like the optional addition of some tamari sauce, for a bit more flavour and dressing for your rice.
The great thing about these bowls, is you can really use any fresh produce or meats that you have in your fridge and be creative with the presentation!
