Homemade Almond Milk

Homemade dairy-free milk alternative!

Ingredients
200g organic raw almonds
Himalayan sea salt
Water (filtered preferably)
1/2 tsp ground vanilla bean or essence
Fresh date (optional for sweetness)

Equipment
Thermomix or High Speed Blender/Processor
Nut milk bag or muslin cloth needed (from health food stores or Honest to Goodness)

Method
Place almonds in a bowl and cover with water, adding a pinch of salt. Let these soak for at least 8 hours or overnight. Then drain and rinse the almonds.

Place almonds into your Thermomix or high speed blender and add 1L of water, vanilla an optional date. Blend on highest speed for 90 seconds until smooth (Thermomix 90 seconds/speed 9)

Place a nut milk bag or muslin cloth over a jug and strain the almond milk into this.

The liquid is your almond milk!

You will have some almond meal/pulp left over. You can use this in bliss balls or a cake if you don’t want to waste it!

Store your almond milk in a sealed glass jar your fridge. It will keep for 4-5 days.

Nut Variations
You can replace the almonds in this recipe for any other nut to change up the flavour. Cashews, macadamias, hazelnuts or brazil nuts make a nice alternative, you can also do half and half. I like half almond, half cashew.
