Crispy Salmon with Avocado Salsa

A great healthy go-to meal in less than 30 minutes!

Ingredients
2 pieces of Atlantic Salmon (with skin and bones)
1/2 avocado, chopped
1 lebanese cucumber, chopped
1/2 red capsicum, chopped
1/2 bunch fresh coriander
1/2 red onion, finely diced
1 lemon
1 tablespoon tamari sauce
Chilli flakes
Coconut oil
Salt & Pepper
Optional: toasted nori sheets thinly sliced, sesame seeds lightly toasted in a pan.

Method
Add avocado, cucumber, capsicum, coriander and red onion to a large bowl. Squeeze juice from half the lemon over the top. Add salt and pepper and stir to combine.

Heat some coconut oil in a pan over medium heat. Drizzle the tamari sauce over the salmon and sprinkle chilli flakes on top, to your liking.

Once the pan is nice and hot, add the salmon (skin down) to the pan. Leave it to cook for a good 4 minutes or until skin is crispy underneath. Then flip the fish over to cook on the other side for another 4 minutes or until crisp. Flip the fish onto its side for a minute on each one. If you want more crispy on the skin you can quickly give it another blast skin down for extra crunch!

Remove the fish from the pan to rest for a few minutes and continue to cook through. If you have a thicker piece of fish, you can finish it off in the oven to cook through.

Place some salad onto your plate an top with the crispy salmon. Squeeze 1/4 lemon over each piece. Sprinkle some nori and roasted sesame seeds on top if you like for some adding nutrients!

Serves 2

Salmon bones are one of the richest sources of calcium! Most of the bones will melt during the cooking process, just leaving the natural minerals behind. If you get the odd larger bone, just remove carefully of course. If you can’t stomach the skin, feel free the remove it, the most important thing is getting those nutrients from the bones anyway.
