Coco Almond Slice

Gluten Free – Dairy Free – Sugar Free – Highly Addictive

Ingredients
1 cup raw almonds
1/4 cup almond butter
1/4 cup flaxseeds
1 tablespoon chia seeds
1/2 tablespoon maca powder
1 tablespoon raw cacao powder
1/4 cup desiccated coconut + extra to sprinkle on top
1/4 cup virgin raw coconut oil, melted
2 drops stevia
1 teaspoon vanilla
Pinch of Himalayan salt
1 tablespoon raw cacao nibs

Method
Place almonds, almond butter, flaxseeds and chia seeds in a high speed blender or Thermomix and blend on high until it reaches a meal like consistency (Thermomix: 10 seconds, speed 9).

Add the maca powder, raw cacao, coconut oil, desiccated coconut, stevia, vanilla and salt and combine on moderate speed (Thermomix: 5 seconds, reverse Speed 4). Then stir through the cacao nibs at the end.

Line a small dish with baking paper and press the mixture into the dish, smoothing the top with the back of a wet spoon. Sprinkle some extra coconut on top. Then place in the fridge to set for 2 hours, remove and cut into pieces. Store in an airtight container in the fridge.

Enjoy as a nice treat alongside a cup of tea.

Protein rich snack
Add a serve or two of protein powder to boost this slice into a great post-workout snack on the go. If you add protein powder, you will need to add more moisture by adding extra coconut oil.
