My favourite gluten free muesli recipe!
Ingredients
2 cups organic quinoa flakes
1 cup organic buckwheat
¼ cup chia seeds
½ cup raw almonds, roughly chopped
¼ cup sunflower seeds
¼ cup pepitas
¼ cup organic goji berries
¼ cup coconut flakes (sulphur and sugar free)
Other options: sesame seeds, linseeds, any other raw nuts or dried fruits
Method
Heat up your oven to 200 degrees celsius. Place buckwheat onto baking tray and roast in the oven for about 10 minutes or until golden brown, keep an eye on it and shake the tray occasionally. You can choose to make any of the buckwheat variations below too.
Simply combine all of the muesli ingredients together with the buckwheat in a bowl. Store in an airtight container in your fridge. Serve with your choice of milk, natural Greek yoghurt and fresh fruit.
Coconut Cinnamon Buckwheat: coat the buckwheat in some coconut oil nad ground cinnamon before roasting it, so yummy!
Activated Buckwheat: You can buy activated buckwheat or to make your own, soak your buckwheat grain in a bowl, covered with water and a pinch of Himalayan rock salt, overnight. Drain, rinse and put in a low temperature oven for a few hours or until completely dry. Or if you have a dehydrator, even better!
