The easiest gluten free and refined sugar free muffins!
Ingredients
1 cup quinoa flakes
1 cup almond meal
4 eggs
1/4 cup coconut dessicated (unsweetened)
3 teaspoons baking powder
1 teaspoon ground cinnamon
pinch of salt
2 tablespoons of pure maple syrup (optional)
Add one of the following flavours:
– 3 mashed bananas and 1/2 cup chopped walnuts
– 4 grated granny smith apples
– 2 grated carrots and 1/2 cup chopped walnuts
Method
Pre-heat the oven to 200 Degrees Celsius. In a bowl combine the quinoa flakes, almond meal, baking powder, salt, cinnamon and coconut. In a separate bowl whisk the eggs together. Add the eggs and your flavour choice to the dry mixture, combine well. Divide into greased muffins tins. Bake for 15-20 minutes.
Makes about 24 mini muffins or 10-12 large muffins.
